It’s definitely not going to be. The most radical attempt to revolutionize email protocol that has been accepted is Tuta, where they use TutaCrypt instead of OpenPGP. And they are like being criticized af, because nobody actually wants to use TutaCrypt to replace standard encryption protocol. And you still get to send email to others with Tuta, which you can’t even do with open.email. I am quite pessimistic on open.email’s future.

On desktop you can use web frontends like phtn. Honestly I would even love to use phtn on mobile as a pwa
Any distro would do, but for server Debian is always the most recommended and used

It depends what you want
If all you need is zero access encryption then Tuta is fine but if you would like to use OpenPGP more like u did in Proton then maybe mailbox.org and posteo would be better choice imho

Yea, this is completely okay, but there is a small difference - for stock /e/os ones, the Bootloader is locked. I am not sure about details but this would be a needed security feature for some applications

Yes, the only choice for most mobile phones are either Android or iOS. Things like Pinephone and FydeTab Duo exists, but so rare.
You can purchase the /e/os version. But it is more expensive

Mailbox and posteo are not fully open source afaik
It is also delayed for me, I just trigger a manual sync every time I made a change…
If main focus is deliverability and encryption plus privacy
You can try with mailbox or posteo with email, and self host etesync for calendar
